A Saison with honey fermented cumquats and pepper bush.
A collaboration beer between Black Arts and IGNI Restaurant.
We made a Saison and dropped it into IGNI Restaurant in a 200L oak barrel. IGNI fermented honey soaked cumquats and added them into the Saison with pepper bush. It then sat to age in oak for 3 months.
This is an incredibly complex tasting Saison.
It has a herby medicinal nose. It's sweet with a fruity tartness. Finishes with subtle smokey notes.
