Made using yellow gum honey from Victoria’s Otway Ranges, collected and spun by Josh at his family home.
This mead is dry and still with a rich honey flavour, balanced out by oak. It finishes quite sweet on the palate.
We use a solera method, so that we can continue releasing aged mead. The majority of this mead has been aged in oak for 3 years.
